For whatever reason I've really been jonesing for honey butter lately.
Here's a nice little recipe that makes soft, creamy honey butter.
It stays spreadable even in the refrigerator.
- 1/2 cup heavy cream
- 1/2 cup honey
- 1/2 cup sugar
- 1 tsp vanilla
- 1 tsp salt
- 13 tbs butter, cubed
- Combine all the ingredients, except the butter, in a pot. Heat on medium-high and bring to a soft boil. Then reduce heat and let simmer until sugar has dissolved, about 90 seconds.
- Put cubed butter in a blender and pour hot sweet mixture over the top. Blend on med-high speed until fully mixed.
- Pour mixture into four 1/2 pint mason jars.
- Refrigerate until set.
Put anywhere you would normally put butter: waffles, pancakes, toast...
