Oh honey!

For whatever reason I've really been jonesing for honey butter lately.

Here's a nice little recipe that makes soft, creamy honey butter.

It stays spreadable even in the refrigerator.

Honey Butter

  • 1/2 cup heavy cream
  • 1/2 cup honey
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • 13 tbs butter, cubed

  1. Combine all the ingredients, except the butter, in a pot. Heat on medium-high and bring to a soft boil. Then reduce heat and let simmer until sugar has dissolved, about 90 seconds.
  2. Put cubed butter in a blender and pour hot sweet mixture over the top. Blend on med-high speed until fully mixed.
  3. Pour mixture into four 1/2 pint mason jars.
  4. Refrigerate until set.

Put anywhere you would normally put butter: waffles, pancakes, toast...
